It is a fatty ham of 100% DUROC breed that is used in the Iberian sector to be crossed with Iberian mothers and obtain 50% Iberian acorn-fed ham.
In this case, it is a large piece, 9-10kgs that gives a great performance, a good cutter can reach up to 4kgs of lean sliced.

Elaboration of organic sausages
Since 1920 Luis Gil produces artisan and ecological Iberian products. They already had in the family years ago with a village butcher shop and together with the shepherd's trade the family tradition was continued in the elaboration of artisanal sausages.
Later generations professionalized the family tradition by creating the sausage factory with the name honoring grandfather Luis.
At present, with the fourth generation of the family fully involved in the family business, an ambitious project has been launched that allows them to produce organic sausages and fresh meats from their own exploitation of animals raised in total freedom and in an ecological way, in harmony with nature and man.
Organic pig farm
