The 100% field cebo ham ibérico Doble F comes from animals raised in total freedom on the farms of the Díaz family in the municipalities of Granada de Rio Tinto and Aracena in the Sierra de Huelva.
The hams cebo de campo 100% ibérico come from animals that entered, perhaps a little late, the montanera but did not fatten sufficiently before the deadline (March 31) established by the pig quality standard ibérico for slaughter with the denomination bellota. It is not usual for a pig ibérico 100% destined to be classified as a 100% bellota downgrade, but animals are not like screws and there are different factors that can influence their fattening capacity.
When March 31 has passed, these animals will remain in the pasture for a few more weeks until they acquire enough weight for slaughter. During this period they will feed on the natural resources provided by the pasture and specially selected feed because it is logical that these "premium" animals are given the best food to take advantage of the one they have already had during the montanera and thus obtain a great product.
The result is that the 100% Double F field cebo ham usually has a high oleic acid index between 51 and 53%.
Double F, is the result of the heritage and knowledge of Mr. Eulogio Díaz and that is now embodied in Fabián Díaz, the 3rd generation of farmers located in the mountains of Huelva and Seville. When they started fattening 100% ibérico pork, the most recognized firms in the world of ibérico came to buy their animals because of the enormous quality of the product they obtained. Given the success, in 2004, the Díaz family began to cure their exclusive hams from the 300 pigs they slaughter annually.
Doble F does its bit in the fight against climate change with this 100% field cebo ham ibérico where they have replaced ropes and vitolas of their products with biodegradable ones such as sisal for the ropes and grass paper for the vitolas.
