Iberian shoulder of field bait and bait

The paleta ibérica of cebo de campo and the paleta of fattening are characterised by the fact that feed has been part of the feeding of the Iberian pigs that give rise to these pieces.

A paleta of fattening ibérica comes from animals that were intensively bred on specialized farms, are fed exclusively with feed without access to La Dehesa during the period of "La Montanera".

On the other hand, the ibérica field fattening paleta is a piece that comes from Iberian pigs raised in freedom and that have been able to enjoy the resources of La Deheseven though they are also supplemented with feed.

Pigs that give rise to bellota shoulders can only be slaughtered between December 15 and March 31, fattening pigs and cebo de campo are slaughtered throughout the year.

The racial purity of a bait paleta or field bait paleta may be 50% ibérica, 75% ibérica and 100% ibérica, although it is usual to find 50% ibérica paddles and to a lesser extent 75% ibérica paddles.

The cebo de campo paleta ibérica is juicy and very tasty. Its flavor is milder and less complex than that of bellota paleta ibérica.

Its pink flesh with fat infiltrations, creates its delicious intense flavor with sweet tones and is characterized by being the most economical way to enjoy the flavor of ibérico.

The 50% ibérica bait paleta has less intramuscular fat infiltration than the cebo de campo paleta ibérica and its texture is firmer with a less complex flavor in nuances and flavors, due to its diet.
