What are sweet acorns and why do they make the paleta ibérica 17 Villages unique?
The bellota like all fruits, has sugars in its composition. The average is usually 3.5% and the hundred-year-old holm oaks of our Dehesa have 9%, almost triple the usual. This doesn't mean that the ham is going to be sweet, no!! But the pig ibérico as a monogastric animal, synthesizes in its meat the food it takes. In this way, a bellota with more sugar will give the ham a unique and special flavor.
Our Dehesa, located in the Sierra de Aracena Picos de Aroche Natural Park, has a very high density of holm oaks that allow a higher consumption of bellota per animal that translates into a higher % of oleic acid, reaching up to 60% well above the usual.
