From animals raised in the Dehesa Salmantina that after its sacrifice is cured to take advantage of the special climatic conditions of famous Salamanca populations producing Iberian ham.
The combination of the acorn and the natural pastures of the Dehesa and the special selection of Iberian acorn-fed hams from the 2016 vintage has allowed us to obtain a 50% Iberian Bellota Ham with an exceptional flavor and aroma.
All Melquiades Rodríguez Iberian products have the quality guarantee of the CERTICAR certifier that confirms compliance with the Iberian standard and the absolute traceability of this slicing.
How is traceability achieved in slicing?
Each 50% Iberian acorn-fed ham has its numbered bridle. There is a yield associated with the cut in each Iberian ham (between 40% and 50%). The certifying body checks that the yield of the ham is logical and the producer must demonstrate the performance he declares.
In this way, the number of sliced sachets that is achieved with each acorn-fed ham is known.
Thus, each batch of sachets is always associated with one or more flanges of acorn-fed ham. There is no loss, you will always know which flanges each sliced sachet belongs to.
