Buying Iberian ham with a Protected Designation of Origin is always an added guarantee of quality. But what is a Protected Designation of Origin (P.D.O.)?

The concept of P.D.O. comes from the European Union Regulations. A Denomination of Origin identifies a product originating from a specific locality or region with well-defined characteristics. These qualities are based on human and natural factors inherent to the geographical area of the Denomination of Origin. All Denominations of Origin require that the products covered by the Denomination of Origin be produced in the geographical area defined by the DO.

In the world of Iberian ham, there are 4 protected designations of origin:

Guijuelo Denomination of Origin

The Iberian ham DOP Guijuelo is proud to be the oldest Denomination of Origin of Iberian Ham in Spain. It has been certifying hams since 1984. The producing region that includes this famous DO Guijuelo includes among others the municipalities of Ledrada, Béjar, Tamames, Cespedosa de Tormes, Guijo de Ávila, La Alberca...
Buying DO Guijuelo ham is probably the most economical option among all the DOs simply because of supply and demand. The production of Jamón Ibérico Denominación de Origen Guijuelo is higher than that of other D.O.'s. See all our Guijuelo hams

Extremadura Denomination of Origin

Following in order of seniority, we move on to the Dehesa de Extremadura Denomination of Origin. Since 1990, the quality of Iberian ham from Extremadura has been regulated by what is recognized as the most demanding of all the D.O. of Iberian Ham. All DO Dehesa Extremadura Iberian ham must come from pigs raised and slaughtered in one of the 85 municipalities in the provinces of Cáceres and Badajoz covered by the standard. Moreover, its elaboration will also be exclusive in Extremadura municipalities such as: Monesterio, Montánchez, Fuente de Cantos, Los Santos de Maimona, Fuentes de León, Higuera la Real or Jerez de los Caballeros. Jabugo Denomination of Origin

The Jabugo Denomination of Origin comes from the name change of the initial Huelva Ham Denomination of Origin, which already achieved remarkable signs of quality and prestige. To buy Jabugo D.O. Ham is to acquire the taste of tradition made Iberian ham in the municipalities of the Sierra de Aracena and Picos de Aroche. It is allowed the elaboration under the Denomination of Origin Jabugo Iberian Ham in municipalities such as Santa Olalla del Cala, Cumbres Mayores, Aracena, Cortegana, Castaño del Robledo, Corteconcepción.see all our Jabugo Hams

Designation of Origin Los Pedroches

The youngest of all the Denominations of Origin of Iberian Ham is the D.O.P. Pedroches, which since 2006 has been certifying the enormous quality of the Iberian ham from the region of Los Pedroches in Córdoba. History explains how, since the 16th century, the Montanera de las Dehesas Cordobesas was exploited in auctions controlled by the Crown. After the disentailments of the 19th century, care was maintained in its cultivation, thus allowing the ecosystem of holm oak, gall oak, rockrose and cork oak forests to reach our days as we know it and to offer us this delicious morsel that is the Iberian ham from Los Pedroches.
To buy ham from Los Pedroches it is not necessary to go to Villanueva de Córdoba, Pozoblanco, Fuente Obejuna, Montoro, Hornachuelos or Hinojosa del Duque. At ibericomio.es we have selected the most artisanal producers who respect the Cordoban tradition of producing Pedroches Denomination of Origin Iberian ham.
