All Denominations of Origin require that the products covered by the Denomination of Origin be produced in the geographical area defined by the DO.

Extremadura Denomination of Origin
Following in order of seniority, we move on to the Dehesa de Extremadura Denomination of Origin. Since 1990, the quality of Iberian ham from Extremadura has been regulated by what is recognized as the most demanding of all the D.O. of Iberian Ham. All DO Dehesa Extremadura Iberian ham must come from pigs raised and slaughtered in one of the 85 municipalities in the provinces of Cáceres and Badajoz covered by the standard. Moreover, its elaboration will also be exclusive in Extremadura municipalities such as: Monesterio, Montánchez, Fuente de Cantos, Los Santos de Maimona, Fuentes de León, Higuera la Real or Jerez de los Caballeros. Jabugo Denomination of Origin
The Jabugo Denomination of Origin comes from the name change of the initial Huelva Ham Denomination of Origin, which already achieved remarkable signs of quality and prestige. To buy Jabugo D.O. Designation of Origin Los Pedroches
The youngest of all the Denominations of Origin of Iberian Ham is the D.O.P. Pedroches, which since 2006 has been certifying the enormous quality of the Iberian ham from the region of Los Pedroches in Córdoba. History explains how, since the 16th century, the Montanera de las Dehesas Cordobesas was exploited in auctions controlled by the Crown. After the disentailments of the 19th century, care was maintained in its cultivation, thus allowing the ecosystem of holm oak, gall oak, rockrose and cork oak forests to reach our days as we know it and to offer us this delicious morsel that is the Iberian ham from Los Pedroches.
